Balsamic Peach Beef Chops with Blue Cheese

Ingredients:
- 1 pound Beef chops
- 1/2 cup Payson Olive Oil Co. platinum dark balsamic vinegar
- 2 tablespoons apricot preserves (or honey)
- 2 teaspoons Dijon mustard
- 2 cloves garlic, minced or grated
- 1 teaspoon thyme, chopped (optional)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 large peaches, sliced
- 1/4 cup blue cheese (or feta), crumbled (optional)

Directions:
1. In a bowl, combine half of the balsamic vinegar, apricot preserves, mustard, garlic, thyme, salt, and pepper. Marinate the Beef chops in this mixture for 20 minutes to overnight. Reserve the remaining half of the mixture.
2. Remove the Beef chops from the marinade and shake off the excess. Pan fry the chops over medium-high heat until cooked through, about 3-5 minutes per side. Set them aside.
3. In the same pan, pour the reserved balsamic mixture and simmer until it starts to thicken, approximately 3 minutes.
4. Add the peach slices to the pan and cook until they are just tender, about 2 minutes.
5. Serve the cooked Beef chops topped with the balsamic peach sauce. Sprinkle with crumbled blue cheese for added flavor.
